Ingredients
- Chopped Basale Soppu / Malabar Spinach – 2 cups
- Grated coconut – 1 cup
- Sambar powder – 2 tsp
- Salt to taste
- Red Chilly – 2 to 3
- Curry leaves – 6
- Mustard seeds – 1 tsp
- Garlic – 1 small size
- Ghee/oil – 1 tsp
Method
- Wash the leaves and cook with little water and salt
- Add sambar powder to grated coconut and grind to smooth paste with water
- Add this paste to cocked leaves, mix well and heat for about 5 minutes
- Heat ghee/oil is a pan, add mustard seeds and when they start spluttering, add red chillies, curry leaves and garlic
- Pour this over sambar and mix
- Serve hot with rice
why don't you add some tamarind juice or amchoor powder,i think that will go well with eggplant.........
