- Chopped vegetables like carrot, beans, potato, cauliflower etc – 1 cup
- Basmati white rice – 3 cups
- Onion – 1 medium size
- Cumin seeds – 1 tsp
- Ginger garlic paste – 1 tsp
- Cinnamon – 1 small
- Cardamom – 2
- Garlic – 3 flakes
- Clove – 2
- Cashew – 5 to 6
- Ghee – 3 tsp
- Salt to taste
- Chopped coriander leaves for garnishing
- Roasted cashews – 2 tsp
Method
- Cook the vegetables and keep aside
- Heat the ghee in a pan and add ginger garlic paste,cumin seed,cardamoms, cinnamon, cloves, cashews and chopped onions for about a minute
- Add rice and 5 cups of water and salt
- Close the lid and cook ( about 15 minutes in medium flame)
- Add cooked vegetables and mix. garnish with coriander leaves and cashews
- Serve hot with vegetable raitha
Another Method – you can fry the vegetables along with the ingredients mentioned in method 2 and cook along with the rice as mentioned in method 3 onwards.
